Historically prized, however largely lost on the local Japanese market in recent times, this still largely undefined and underappreciated category of sake, referred to as koshu or jyukuseishu, is rapidly winning over the palates of fine wine and spirits connoisseurs, resulting in increased demand from acclaimed restaurants and beverage programs across the globe. There are only a small handful of producers and service specialists that have committed to this remarkable category over the long term. Weve invited them
